Mushroom and Spinach in Coconut Cream Sauce Pasta
In my search for a gluten-free pasta recipe, I came across the most delightful and satisfying almost vegan and relatively healthy dish.
Ingredients:
1Pack Button Mushrooms
1Pack Shitake Mushrooms
1Pack Baby Portabello Mushrooms
1Pack Enoki Mushrooms
1Pack Baby Spinach
1Bulb Onion
5Cloves Garlic
4tsp Liquid Seasoning
4tsp Soy Sauce
1 1/2Cups Coconut Cream
Salt and Pepper to taste
Butter
1Box Gluten-free Pasta
Procedure:
1. Fry mushrooms in butter (in batches) til brown.
2. Saute onions and garlic, then add mushrooms.
3. Add liquid seasoning, soy sauce, and coconut cream, and wait for sauce to boil, then lower fire to simmer, add salt and pepper according to your taste
4. Add spinach when sauce is simmering, and leave for 5 minutes.
Serves 3-4 persons
